Ingredients
  

  • 4 medium tortillas
  • 250 g mascarpone cheese or cream cheese
  • 200 g crumbled feta cheese
  • 3 small bell peppers diced
  • 4 iceberg lettuce leaves
  • 8 slices pastrami or deli meat
  • Zest of ½ lemon
  • Drizzle of olive oil
  • 4 –5 tbsp fried onions crumbled

Instructions
 

  • Lay out each tortilla on a clean surface.
  • Spread mascarpone evenly over the entire surface.
  • Add lettuce, pastrami, diced peppers, and crumbled feta.
  • Sprinkle with lemon zest, drizzle with olive oil, and add fried onions.
  • Roll tightly, wrap each roll in plastic wrap, and refrigerate for at least 30 minutes.
  • Slice into 1-inch pinwheels just before serving.

Notes

  • Add fried onions just before serving to keep them crispy.
  • Substitute fillings based on your preferences or dietary needs.
  • Store uncut rolls in plastic wrap for up to 24 hours.
