Ingredients
  

  • ½ cup cottage cheese
  • 2 scoops chocolate protein powder
  • 2 tablespoons unsweetened cocoa powder
  • ¼ cup almond flour
  • 2 tablespoons almond butter
  • 2 tablespoons maple syrup or honey
  • ¼ cup mini chocolate chips
  • 1 –2 teaspoons water

Instructions
 

  • Blend the cottage cheese in a small blender or food processor until smooth and creamy.
  • In a medium bowl, mix protein powder, cocoa powder, almond flour, and blended cottage cheese.
  • Add nut butter and maple syrup. Stir everything together using a spatula.
  • If the dough seems dry, add 1 teaspoon of water at a time until it's rollable.
  • Roll the dough into small bite-sized balls using your hands or a cookie scoop.
  • Press or roll each ball into mini chocolate chips if desired.
  • Chill bites in the fridge for 10–15 minutes to set, or enjoy immediately.
  • Store in an airtight container in the fridge for up to 7 days.

Notes

  • You can substitute cottage cheese with thick Greek yogurt or blended silken tofu for a dairy-free option.
  • Sunflower seed butter works great as a nut-free alternative.
  • These protein bites can be frozen for up to 3 months and thawed in the fridge overnight.
