Ingredients
  

  • 1 prepared chocolate cookie crust 9-inch
  • 1 cup semi-sweet chocolate chips
  • 2 tablespoons unsalted butter
  • 1 teaspoon vanilla extract
  • 8 oz cream cheese softened
  • 1/4 cup powdered sugar
  • 1 1/2 cups whipped cream or Cool Whip plus extra for topping
  • Chocolate shavings for garnish (optional)

Instructions
 

  • In a heatproof bowl, melt the chocolate chips with butter using a microwave or double boiler. Stir until smooth, then mix in vanilla extract. Let it cool slightly.
  • In another bowl, beat softened cream cheese with powdered sugar until smooth and fluffy.
  • Fold the cooled chocolate mixture into the cream cheese until well combined.
  • Gently fold in the whipped cream until the filling is airy and smooth. Don’t overmix.
  • Spoon the filling into the prepared cookie crust and smooth the top with a spatula.
  • Chill the pie in the fridge for at least 4 hours or overnight, until fully set.
  • Before serving, top with extra whipped cream and chocolate shavings if desired.

Notes

Swap cream cheese for mascarpone for a lighter flavor.
Use dairy-free whipped topping and dark chocolate for a vegan-friendly version.
For added crunch, sprinkle crushed pretzels or nuts on top before chilling.
