Instructions
In a heatproof bowl, melt the chocolate chips with butter using a microwave or double boiler. Stir until smooth, then mix in vanilla extract. Let it cool slightly.
In another bowl, beat softened cream cheese with powdered sugar until smooth and fluffy.
Fold the cooled chocolate mixture into the cream cheese until well combined.
Gently fold in the whipped cream until the filling is airy and smooth. Don’t overmix.
Spoon the filling into the prepared cookie crust and smooth the top with a spatula.
Chill the pie in the fridge for at least 4 hours or overnight, until fully set.
Before serving, top with extra whipped cream and chocolate shavings if desired.
Notes
Swap cream cheese for mascarpone for a lighter flavor. Use dairy-free whipped topping and dark chocolate for a vegan-friendly version. For added crunch, sprinkle crushed pretzels or nuts on top before chilling.
