Ingredients
  

  • 2 lbs ground beef 85–90% lean
  • 2 large eggs
  • 1/2 cup almond flour or 1/3 cup finely grated parmesan
  • 1 small onion finely chopped
  • 3 cloves garlic minced
  • 1/4 cup unsweetened ketchup or sugar-free ketchup
  • 2 tbsp fresh parsley chopped (or 1 tbsp dried)
  • 2 tsp Italian seasoning
  • 1 tsp smoked paprika
  • 1 1/2 tsp salt
  • 1/2 tsp black pepper
  • For the glaze:
  • 1/4 cup sugar-free ketchup
  • 1 tbsp apple cider vinegar
  • 1 tsp yellow mustard
  • Optional: pinch of erythritol or monk fruit for added sweetness

Instructions
 

  • Preheat oven to 350°F (175°C). Line a loaf pan with parchment or lightly grease.
  • In a large bowl, gently combine ground beef, eggs, almond flour (or parmesan), onion, garlic, parsley, Italian seasoning, smoked paprika, salt, and pepper. Mix just until combined—do not overmix for a juicy loaf.
  • Transfer the mixture to the prepared loaf pan. Shape into an even loaf, pressing gently.
  • Bake uncovered for 30 minutes.
  • While baking, mix together glaze ingredients: sugar-free ketchup, apple cider vinegar, and yellow mustard.
  • After 30 minutes, spread glaze evenly over the loaf. Return to oven and bake 25–30 minutes more, or until the internal temperature reaches 160°F (71°C).
  • Let the meatloaf rest in the pan 10–15 minutes before slicing and serving.

Notes

You can use all almond flour or swap in finely grated parmesan for extra flavor. Avoid pork rinds or non-halal binders—this recipe is friendly for everyone. Make it ahead, freeze for meal prep, or serve with keto sides like cauliflower mash or green beans.
