Equipment

  • small saucepan
  • stirring spoon
  • fine mesh sieve (optional)
  • clean jar

Ingredients

  • 120 ml honey (about 1/2 cup, any variety)
  • 1–1.5 tsp chili flakes or crushed red pepper (or favorite hot sauce)
  • 1 tbsp apple cider vinegar (optional, for tang)
  • 1 pinch salt (optional)

Instructions

  • In a small saucepan, combine honey, chili flakes, and apple cider vinegar (if using). Add a pinch of salt, if desired.
  • Heat gently over low, stirring, until honey is thin and flavors mingle (about 5 minutes). Do not boil.
  • Taste and adjust. Add more chili for heat or extra honey to mellow spice.
  • Strain through a fine mesh sieve for a smooth sauce, or leave chili flakes in for texture.
  • Pour into a clean jar and let cool slightly before using. Store leftovers at room temp for up to a month.

Notes

Don’t boil the honey—just gently warm it to preserve its natural flavor. Adjust chili for more or less heat. Try straining for a silky sauce, or leave the flakes for extra punch. Store leftovers in a clean jar at room temp for up to a month. Variations: add smoked paprika for BBQ vibes, lemon and garlic for brightness, or swap some honey for maple syrup. Kid-friendly tip: mix with ketchup for no-heat sweetness!
