Ingredients

  • 12 Medjool dates pitted
  • 1/2 cup Peanut butter or almond/sunflower/tahini
  • 1/2 cup Dark chocolate chips
  • 1 teaspoon Coconut oil optional
  • Chopped nuts sea salt, toasted coconut (opt.) for topping

Instructions
 

  • Line a baking sheet with parchment paper. Pit and flatten the dates into a single layer, forming a rectangle.
  • Warm peanut butter in the microwave for about 10 seconds. Spread evenly over the date layer.
  • In a microwave-safe bowl, melt chocolate chips with coconut oil in 20-second intervals, stirring between each, until smooth.
  • Pour the melted chocolate over the nut butter layer, spreading evenly. Sprinkle on nuts, salt, or coconut while the chocolate is warm.
  • Chill the pan in the fridge for 30 minutes or freezer for 10–15 minutes, until the chocolate is set.
  • Lift the bark out, place on a cutting board, and slice into shards or squares. Serve and enjoy!

Notes

For nut-free, use sunflower seed butter or tahini. Store in an airtight container in the fridge for up to a week or freezer for 2 months.
