Ingredients

  • 1 lb chicken breast or thighs diced
  • 1 tbsp olive oil
  • 2 cloves garlic minced
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 2 cups baby spinach
  • 1/2 cup heavy cream
  • 1/2 cup grated parmesan cheese
  • Salt and pepper to taste

Instructions
 

  • Heat olive oil in a large pot over medium heat. Add diced chicken and cook until lightly browned.
  • Add garlic and stir until fragrant, about 30 seconds.
  • Stir in orzo and pour in chicken broth. Bring to a simmer.
  • Cover and cook for 8–10 minutes, stirring occasionally, until orzo is tender and most of the liquid is absorbed.
  • Stir in baby spinach until wilted.
  • Add heavy cream and parmesan cheese. Stir until creamy and smooth.
  • Season with salt and pepper to taste, then serve hot.

Notes

  • Swap spinach for kale or arugula if desired.
  • To make dairy-free, use coconut milk instead of cream and omit cheese.
  • Great for leftovers — reheat gently on the stove with a splash of broth.
