- 1 tbsp olive oil
- 2 cloves garlic minced
- 1 cup orzo pasta
- 2 cups chicken broth
- 2 cups baby spinach
- 1/2 cup heavy cream
- 1/2 cup grated parmesan cheese
- Salt and pepper to taste
Heat olive oil in a large pot over medium heat. Add diced chicken and cook until lightly browned.
Add garlic and stir until fragrant, about 30 seconds.
Stir in orzo and pour in chicken broth. Bring to a simmer.
Cover and cook for 8–10 minutes, stirring occasionally, until orzo is tender and most of the liquid is absorbed.
