Chocolate-Covered Raspberry Bites

These chocolate-covered raspberry bites are fruity, fudgy, and super easy. Only five ingredients, no baking, and freezer-friendly—perfect for snacking or gifting.

  • Mixing bowl
  • Fork
  • Microwave-safe bowl
  • Parchment Paper

Ingredients
  

  • 1 heaping cup fresh raspberries
  • 1 tablespoon chia seeds
  • 5 ounces dark chocolate or your preferred chocolate
  • 1 teaspoon coconut oil
  • Pinch of sea salt

Instructions
 

  • Line a quarter sheet pan with parchment paper and set aside.
  • In a small bowl, mash the raspberries with the back of a fork until they’re broken down.
  • Stir in chia seeds and let sit for 5–10 minutes to thicken.
  • Scoop 1-tablespoon portions onto the sheet pan. Freeze for 1 hour until set.
  • Melt chocolate in microwave 30–60 seconds, stir halfway. Mix in coconut oil.
  • Dip frozen raspberry-chia bites in chocolate. Place back on sheet pan.
  • Sprinkle sea salt while chocolate is wet. Freeze 1 more hour until firm.

Notes

Once frozen, transfer bites to an airtight container. Store in the freezer up to 3 months. Let sit 1–2 minutes at room temp before enjoying.
